1.5oz Echo Spirits Queen's Share Rum

0.5oz Rhum JM Gold Martinique Rum

1.5oz Pawpaw Shrub

0.5oz Lime Juice

0.5oz Honey Syrup (1:1)

A daiquiri, twice-shaken, in a way. Brought to you courtesy of our largest native fruit, in hiding right over your head. Inspired by childhood memories of enjoying pawpaws long before I knew where I actually was or what I was eating, I set out to finally learn how to identify the trees and find a reliable spot to forage the late summer fruit. It’s surreal working with something that’s unfamiliar,  ancient and unaltered by humans—gently shaking trees and allowing nature to yield what it’s ready to give up, and working with it as an ingredient so far out of it’s historical context.

Pawpaw Shrub

1 part pawpaw vinegar (or apple cider vinegar)
1 part sugar
1 part pawpaw puree (blend separated pulp until homogenous)

Heat vinegar and sugar until dissolved. Let cool and whisk in pawpaw puree. Chill.

Cocktail

Combine rums, lime juice, honey syrup, and pawpaw shrub in a shaker with ice. Shake until well chilled. Double strain until a chilled coupe.
